Wonderbird Spirits "Seelbach's" Cask Finished Gin No. 61

Proof: 100 proof Tasting Notes: Smooth with bourbon overtones and notes of caramel, clove, citrus, and finishes with subtle spice and vanilla. About the product: Wonderbird Spirits is a grain-to-glass gin distillery that makes their base spirit out of Jasmine rice grown in the Mississippi Delta utilizing an adapted sake method of fermentation.  We then individually distill each of our botanicals and then blend those individual distillates together precisely to create a layered complex gin. For this cask finished release, we finished our No. 61 gin in a Manifest Distilling bourbon cask for 224 days. The result is a wonderfully smooth gin with strong bourbon overtones and caramel, clove, and spice notes brought on by the barrel. This barrel is a Seelbach's exclusive. A fantastic bourbon replacement for an Old-Fashioned or to sip neat.
