Jin Jun Mei originated from the Wuyi Mountains in Fujian province, which is renowned for its tea production. It was first developed in the early 21st century by a tea master named Jiang Yuanxun. Jiang wanted to create a premium black tea that could rival the famous Lapsang Souchong tea from the same region.What sets Jin Jun Mei apart is its intricate production process and the careful selection of tea leaves. The tea is made from young buds that are picked in the early spring, usually around late March or early April. These buds are covered in fine golden hairs, which contribute to the tea's name "Jin Jun Mei," meaning "Golden Beautiful Eyebrow" in Chinese.The processing of Jin Jun Mei involves several steps. After plucking, the buds undergo withering, during which they are spread out and left to dry for a few hours. This is followed by a process known as rolling, where the leaves are gently rolled to shape them and release their flavor. The rolled leaves are then fermented, oxidized,
