2022 Bernard Defaix Chablis Grand Cru 'Bougros'

Bougros has the steepest slopes of any of the grand cru vineyards in Chablis, producing Chardonnay grapes of outstanding quality and precision, as well as the quintessential flinty minerality that the region is known for. After hand-picking and gentle pneumatic pressing, the grapes are naturally fermented in used French oak barrels. Eighteen months of gentle lees ageing and batonnage adds texture in the same wood vessels. Bottled unfined with light filtration. An exceptional expression of everything great about Chablis.
