It's always soup season! Lay the base for flavorful miso soups, ramens, and consommés with our Awase Dashi kit. Awase indicates that two ingredients are combined for this soup base - in this case we combined kombu with bonito flakes. Make warm or ahead by cold brewing the kombu. Add a handful of dried shiitake mushrooms or even freeze in an ice cube tray to always have dashi on hand. Once made, keep any extra dashi in the refrigerator for 2 - 3 days or freeze up to 2 weeks. The leftover kombu and bonito can be used again to make a 2nd batch of lighter dashi or throw into cooking.
