Demerara Sugar is sugar evaporated from pressed sugar cane juice. The sugar gets its name from the colonial region it originated, now present day Guyana. While it has a similar light brown color as turbinado, it is not as strong in molasses. The sugar crystals do not melt as easily into batters so they are not a one to one replacement for white sugar in some recipes. You can swap them for brown sugar or confectioner's sugar for a different texture. The large crystals will create sugar crusts on muffins, breads, and cookies. Use in hot drinks and simple syrups to give your beverage a slightly toffee flavor.
