SPIRIT: Gin REGION: Catskills, New York, United States 47% ALC. BY VOL. (94 Proof) Distilled from 100% Whey neutral spirits and matured for 5-6 weeks in stainless steel. AROMAS:  white flowers, jasmine, green watermelon rind, earthy tones of grassy pastures and cardamom spice. PALATE: a silky roundness with hints of black walnut, freshly cut fennel, a creamy sweetness balanced by orange rind, bitter herbs, and tropical fruit. A spirit-forward cross between a London Dry and New American style gin. Crafted using low-intervention distillation techniques, the gin is made with seven botanicals and mineral-rich spring water from the Catskills. It culminates in a beautifully textured, woodsy gin that eloquently captures its terroir. Isolation Proof Original is earthy and spicy, with a backbone of sweetness from licorice and orange peel, and a signature peppery finish from Cubeb.
