
Etienne Calsac Champagne Rosé de Craie (750ml)
Etienne Calsac took over his grandparents' vines in 2010. They have 3 ha scattered in and around Avize that were once rented to some bigger houses. He employs organic farming and works fairly hands-off, vinifying the individual parcels separately, fermenting and aging in a combination of tank and used barrels. The Rosé De Craie is composed of hand-harvested Chardonnay (90%) and Pinot Noir (10%) from vines planted in the 80s and 90s. It is vinified as a 'rosé d’assemblage,' meaning that the Pinot Noir is blended into the base wine before secondary fermentation in bottle. It is agesd on lees for 18-24 months and receives 2g/L of dosage. Only about 1,500 bottles are produced.
