This wine is made of 100% Chenin Blanc. Fermented with native yeasts, minimal sulfur addition and zero fining or filtration. Oily, slightly nutty and reminiscent of candied lemon peels and yellow peach, this Chenin is full of complex flavors, richness, and structure. We would pair this with the difficult asparagus dressed in beurre blanc.
