This champagne is made entirely from Chardonnay. Pair it with fried oyster mushrooms. As the green wax stamp indicates, there are no added sulfites, which is unusual for Champagne. The winemaking in Champagne must be so precise and any unwanted fermentation is usually prevented by sulfites. Ponson's Blanc de Blancs showcases the raw nature of Chardonnay in a more memorable way than some Blanc de Blancs can be.
