Sylvie Esmonin 'Cuvee Sylvie' Bourgogne Rouge, 2022

Named for the master herself, this cuvée is a perfect jumping off point into masterful Burgundian wine. Vintage to vintage, Sylvie carefully alters the quantity of grapes she allows to see whole cluster maceration, which imparts a gentle addition of tannin and brings you that much closer to the vineyard itself. Between this and her intentional division of barreling, you can feel the steady hand that guides this wine to its excellence, bright cherry and raspberry tempered by earth and mushroom. We would recommend enjoying this alongside pan-seared pork chops in a creamy mustard sauce.
