Grenache/Cinsault/Carignan from 50 year-old vines biodynamically cultivated in the Minervois in Languedoc. Grapes are hand-harvested from a 3-hectare site, macerate for 12 days prior to pressing and spontaneous fermentation in stainless steel vat prior to further aging also in steel. Bottled unfined, unfiltered, minimal (13mg/L) added SO2.
