Co-ferment, Catalonian Pét-Nat! 80% Macabeo, 20% Tempranillo. 2 days maceration for the Macabeo, 7 days for the Tempranillo. The grapes are pressed into the same stainless steel tank for spontaneous fermentation. The wine rested for 6 months with the lees and is disgorged in bottle. Unfined, unfiltered, no additional SO2. 10.5%ABV
