Dolores Cabrera, "La Araucaria Blanco" 2023

From a single plot of Listán Blanco vineyards named 'Hacienda Perdida' planted on the northern slopes of Mount Teide in the traditional training method of the Orotava Valley on this end of Tenerife, a la Cordón Trenzado ("braided cord"). Grapes are hand-harvested, destemmed and macerate for 20 days. Pressed, the juice spontaneously ferments in stainless steel vat prior to agin on the fine lees for 7 months. Bottled unfined, unfiltered, no additional SO2.
