Syrah/Grenache/Carignan from limestone/quartzite/gravel soils in the Hérault of southern France. Grapes are hand-harvested, and macerate for 15 days with regular pumpovers & a few punchdowns. Pressed, spontaneously fermented and aged in neutral vessel for 10 months prior to bottling unfined, unfiltered, minimal (<20ppm) added SO2.
