90% Gamay d'Auvergne from old-vines and 10% Noirfleurien planted at the foot of an ancient volcano. The grapes undergo semi-carbonic maceration with half of the grapes destemmed. Spontaneous fermentation starts in tank prior to racking to neutral barrel for a short élevage. Bottled unfined, unfiltered, no additional SO2. 12.5%ABV ONE BOTTLE PER CUSTOMER due to hyper-limited quantities.
