100% Gamay from a 2 hectare parcel in Ardoix, deep in the hills of the Ardèche. Organically cultivated ~50 year-old vines at 400m elevation. Grapes are hand-harvested and 70% are destemmed upon arrival at the winery, 30% are left whole-cluster. Spontaneous co-fermentation in stainless steel vat prior to pressing and 8 month élevage in stainless steel & 300/400L barrels. Bottled unfined, coarsely filtered, minimal (<15ppm) added SO2.
