Biodynamically farmed Pinot Noir from Molsheim in the north of Alsace on clay-limestone soils. Grapes are hand-harvested, 20% destemmed, and macerate with 80% whole-bunches for 15 days prior to pressing. 3/4 foudre, 1/4 stainless steel for the aging sur lie after spontaneous fermentation in tank. Bottled unfined, unfiltered, no additional SO2. 13% ABV
