100% Sauvignon Blanc from 40+ year-old vines planted to limestone/clay/silt soils in its rockier form found at the middle of the hill upon which most of the Muster vines are planted. Grapes are hand-harvested, destemmed, and slowly, gently pressed. Juice spontaneously ferments in 2400L oval, neutral wooden cask prior to 2 years' élevage sur lie also in neutral wood. Bottled unfined, unfiltered, no additional SO2.
