80% Trousseau, 20% Ploussard from biodynamically cultivated vines in the Jura. Grapes are hand-harvested and spontaneously co-ferment and macerate for 2 months prior to pressing. Élevage in neutral barrel (20% of the wine; 80% in stainless steel) for 10 months before being bottled unfined, unfiltered, no additional SO2.
