50/50 Gamay and Pinot from regeneratively farmed vines in Cambria. Grapes are hand-harvested, partially destemmed and macerate just over the course of one night while spontaneously fermenting prior to pressing. Pinot Noir fermented to dryness and added to still-fermenting Gamay that is then bottled unfined, unfiltered, no additional SO2. The wine fermented to full dryness under crown cap and was hand-riddled and disgorged.
