Criolla Chica & Criolla Grande from organically cultivated vines high in the Uco Valley of Argentina. Grapes are hand-harvested from 80+ year-old vines. 90% destemmed, 10% whole-cluster, grapes spontaneously ferment for 20 days in stainless steel prior to pressing. Élevage for up to 10 months also in stainless steel. Bottled unfined, unfiltered, minimal (<35ppm) added SO2.
