Elusive, delightfully-confounding, downright delicious: Cuvée 21550, Valot's negociant bottling of Pinot Noir. Purchased from Ladoix (Burgundy) and vinified back in Beaujeu. Same vinification process as his other cuvées: The grapes are fermented whole cluster in tanks and then pressed into old barrels to age for one year. No SO2.
