From organically cultivated vines in Greve in Chianti, Tuscany, this is 50% Sangiovese (blanc des noirs), 20% Trebbiano, 20% Malvasia, 10% Moscato from 20 year-old vines. Grapes are hand-harvested, whole-bunch directly pressed and the juice is cold-settled. Spontaneous fermentation in ceramic tank and tonneaux prior to aging in neutral oak for 8 months. Bottled unfined, unfiltered, minimal (<20ppm) added SO2.
