Abura Age is Japanese deep-fried tofu pouches. It is made by cutting tofu into thin slices and deep-frying twice - first to expand and again to turn them golden brown. The frying method creates a pocket inside the tofu, which allows you to stuff with rice like in inari sushi. You will also often find this tofu as a topping for udon and ingredient in oden.
