Fruit for this tart and thirst-quenching Gamay comes from 80-year-old vines in Beaujolais. The Ganevats carbonically macerate the clusters in steel with native yeasts, then age it for ten months prior to release. This juice is all things cherry, pomegranate, and white pepper. Sip chilled.
