Traditionally the grapes rested on straw mats for roughly 120 days during winter, losing 30-40% of their weight and increasing the concentration of flavors and the sugar content which yields higher alcohol wines. Most wineries use modern drying chambers now, but the process still demands an investment of time and space on behalf of the winery. ~section~
