Florence et François Bachelier Vieilles Vignes Chablis 2021

Old-style Chablis from the North. Florence and her husband François are 8th generation farmers with eighten hectares in Villy.Most of their vines are betwen 60-80-year-old including a tiny slice of the Chablis Premier Cru “Les Fourneaux”, the only Premier Cru to face due South.Harvested on September 21st, 2021, and after a traditional vinification, the wine ages on its fine lees for 8 to 9 months in stainless steel vats, before resting in oak barrels for another 6 to 8 months. The wine is then filtered and bottled on the estate. 100% Chardonnay on limestone sloped soil on both sides of the river “Le Serein”
