The first lemons are believed to have evolved on the lower slopes of the Himalayan Mountains in eastern India. Lemons originated from a cross between the most ancient citrus called citron and sour orange. In early Colonial American recipes, the use of local fruits like apples, blueberries, grapes, and peaches were popular, but the most revered and rarely available were tropical fruits. Lemons came mostly from the Caribbean with transportation making them extraordinarily expensive. Families put a lot of effort into preserv
