85% Grechetto, 15% Trebbiano Spolentino. Made using hand picked Grechetto and Trebianno Spoletino grapes harvested separately in September and October. Bottled with the waning moon in April. The must ferments with the skins and natural yeasts in open vats for two days before being separated from the skins. The two parts are then left to ferment separately in the open air without any type of temperature control. The resulting wine is then returned to the fine lees and left to age in steel tanks for several months. It is then purified through racking and oxygenation. No sulfur added. Biodynamic.
