Côme Isambert Cosmobulle Pet Nat 2020

Grape Varieties: Grolleau Gris, Grolleau Noir, Pineau d’Aunis, Sauvignon Blanc,Chardonnay, Chenin Blanc To make this pétillant naturel (aka pét-nat), Côme pressed the Chardonnay, CheninBlanc, and Sauvignon Blanc directly. After a short maceration of a few hours, thejuice from the Grolleau Gris, Grolleau Noir, and Pineau d’Aunis is drained off. Afterthe initial fermentation in fiberglass vats, the wine is bottled, then aged in the bottleon the lees until it was disgorged in late fall 2023. The wine hassome body to it, a light white pepper nose with a ruby red color. It pairs well with roasted summer vegetables, pork, pizza, and could be fun with a cheese course!
