Palmento Costanzo Mofete Etna Bianco DOC 2022 70% Carricante and 30% Catarratto from various estate vineyards. Each plot is fermented separately with native yeasts in stainless steel. A selection of the resulting batches is aged briefly on the fine lees for a 4 months. Medium straw yellow colour with a fragrant bouquet rich of citrus fruit and mineral notes, with hints of Mediterranean herbs. It is vibrant, fresh and sapid on the palate. Etna is a DOC which covers the slopes of Mount Etna, the 3330 meter (10,920ft) active volcano that dominates the Italian island of Sicily. It was the very first DOC on the island, created in August 1968 and followed nine months later by that of Sicily's most famous wine, Marsala. The most commonly produced form of Etna wine is the standard Etna Rosso, a red made predominantly from the Nerello Mascalese grape variety.
