Palmento Costanzo Mofete Etna Rosso DOC 2021 Bright pale pink, elegant bouquet of wild strawberry and violet with sage and thyme notes,It is mineral, fresh and persistent on the palate. In 2021 the Costanzo Family began a painstaking renovation of the dormant 19th century Palmento Winery and cellar, bringing it back to its original form and function. Their rosato is a pure expression of organic 100% Nerello Mascalese, which is hand-harvested and cold soaked for 8 hours prior to fermentation in stainless steel tank with indigenous. The wine ages on its fine lees for 4 months followed by another 2 months in bottle. The nose is a veritable garden party with violets, strawberries, and herbs. The palate includes a medley of fresh red berries, crisp acidity, a hint of saline minerality, and a clean, refreshing finish. Pair with scallops on spring pea risotto or curry grilled vegetables on polenta.
