His vineyards are certified organic and are on a garrigue, a type of low, open Mediterranean scrubland with low trees, shrubs, herbs, and bunchgrasses. To get the best out of his terroir, Bories uses a goblet pruning technique. This technique creates low branching vines because keeping them close to the ground shields the grapes from wind and sun. This creates a cool shady environment to keep grapes from over-ripening and maintains their acidity. Juicy and light body with crunch tannins with notes of red fruit and a white pepper spice finish. Excellent with harvest foods.
