I just threw this together as a meal for myself a few years ago with random leftover ingredients from the week's pizza assembly. And I thought I knew what it would taste like, but this is one of those "greater than the sum of its parts" kind of pizzas. Knocked my sockies off. So I'm tossing it out there once again for you to enjoy, too. Peppadew is the brand name for the sweet Juanita peppers with super low heat. The little jewels with massive flavor were first discovered only in 1993. I paired them this week with some s l o w l y caramelized onion to bring a sweet base note to the pizza. The goat cheese brings a touch of creamy sharpness to cut the sweet, and then I just get crazy with the hot honey to bring it all right back.
