
PERSIAN CUCUMBER
~20 lbs Persian Cucumber aka "Persian Cuke", "Yin-Du-Xiao-Huang-Gua", "印度小黄瓜" Persian cucumber is a small cucumber with thin skin and soft tiny seeds. It is usually four to six inches in length. Persian cucumber tastes refreshing, mild, and crunchy. It is often used in sandwiches and salad. Traditionally used in Asian spicy cucumber salad. Persian cucumber is available year-round. Handling Tip Selection Persian cucumber is firm without blemishes and soft spots. A uniform dark green color skin with no signs of yellowing. Storage Persian cucumber should be stored at 50ºF - 54ºF (10ºC - 12.5ºC) with a relative humidity of ninety-five percent and periodic mist. The typical shelf life is less than fourteen days. High humidity is important to avoid shriveling. Persian cucumber is very sensitive to ethylene, a naturally occurring gas that regulates ripening. Persian cucumbers should not be stored with high ethylene-producing products to extend shelf life and avoid yellowing and decay.
