Raspberry Linzer Cookie

Inspired by a bright and cheerful cookie for cold winter nights, Linzer Platzchen is a buttery shortbread cookie sandwich with tasty raspberry jam inside. Named after the Linzer Torte, Linzer cookies are a bite-sized version of the cake that dates back to 1653 when an Austrian Abbey is widely recognized as creating the world’s oldest cake recipe. A lemon-almond cookie and  tart raspberry jam swirled vanilla ice cream.
