Located far to the northeast of the country, the is beautiful mountainous region is home to some of the best food in all of Spain. In this class we will cover 5 regional dishes in the style of Tapas! Starting off we have Escalivada, red peppers, sweet spanish onion, and eggplant are roasted whole then cleaned and dressed in a vinaigrette made with their own natural juices and of course some delicious toasty bread! Next up is Samfaina with Golden Fried Eggs, a delicious stew resembling the French ratatouille, but elevated with the use of pimentón de la vera and topped with shallow-fried eggs.
