100% Riesling from the eastern shores of Seneca Lake planted in glacial silty loam soils. The grapes are hand-harvested and gently crushed for an overnight soak. Pressed, the juice spontaneously ferments in a combination of neutral foudre, barrel, and stainless steel prior to short maturation and blending thereafter. Bottled unfined, unfiltered, no additional SO2. 11.2% ABV
