100% Riesling from vines cultivated on Seneca Lake planted to glacial silty loamy soils. Grapes are hand-harvested, and gently crushed for an overnight soak. Pressed and spontaneously fermented in neutral 36HL oak foudre. Élevage for 9 months on the fine lees. Bottled unfined, unfiltered, no additional SO2.
