100% biodynamically cultivated Lambrusco del Pellegrino aka Lambruscone from old-vines outside Modena in Castelnuovo del Pellegrino. Grapes are hand-harvested, destemmed, macerated for 3 days prior to pressing and spontaneous fermentation. Unfermented grape must is added the following spring and the wine is bottled for secondary fermentation. Aged several years thereafter in bottled. Unfined, unfiltered, no additional SO2. 13%ABV
