100% biodynamically cultivated Sgavetta, a very rare native variety of Emilia-Romagna, particularly the village where Claudio Plessi works, Castelnuovo Rangone outside of Modena. Grapes are hand-harvested from these vines planted in silty/clay/loam soils destemmed, macerated for a couple of weeks before pressing. Spontaneous fermentation and aging in neutral vessel. Bottled unfined, unfiltered, no additional SO2. 12%ABV
