100% Pinot Gris from 25+ year-old vines cultivated in loam-clay-limestone soils of Rosenwiller in Alsace. Grapes are hand-harvested and destemmed prior to a 6-8 day maceration and slow pneumatic pressing. Spontaneously fermented followed by aging in neutral foudre for 6-9 months. Bottled unfined, unfiltered, no additional SO2.
