Domaine Einhart, "Oolithe" 2022

Old-school Alsatian field-blended co-fermented, macerated wine from an upstart producer of the region. Sylvaner, Gewürztraminer, Pinot Gris, Riesling, Auxerrois & Pinot Blanc are all dry-farmed, all 25+ years of age and cultivated in loam-clayey soils. Grapes are destemmed and macerate for 4-days followed by a slow pneumatic pressing into stainless steel tank. Spontaneous fermentation is followed by élevage on the fine lees in the same vessel for 6-9 months. Bottled unfined, unfiltered, no additional SO2. 12.5%ABV
