100% Aligoté Doré grown in Mâcon-Cruzille of Southern Burgundy. Clay/Marl soils with fossilized moraine. Slowly pressed, the juice then undergoes spontaneous fermentation that lasts 2 months in stainless steel. The wine ages a further 10 months in tank prior to being bottled unfined, unfiltered, no additional SO2.
