From the westernmost extent of Moravian (southern Czech's broader windswept, arable plains) viticultural potential, this is 100% Sauvignon Blanc. Grapes are hand-harvested, gently foot-crushed and macerate for 18 hours prior to full pressing. Spontaneous fermentation and élevage in neutral barrel & amphorae for 6-9 months. Bottled unfined, unfiltered, no additional SO2.
