Organically cultivated field blend from Christian who works with ancient Venetian varieties otherwise lost to time - the 'Bianco' is Gruaja, Ottocai, Pedevenda, Sciampagna, Groppella, and Vespaiolo. Grapes are hand-harvested, gently pressed, and spontaneously ferment and age in neutral vessel. Bottled unfined, unfiltered, minimal (<15ppm) added SO2.
