100% Chenin Blanc from 50 year-old bush vines organically farmed in Swartland, South Africa some 30 km from the ocean. Whole-bunch, directly pressed into 4 500L neutral foudre and 1500L stainless steel tank for 6 months where the juice spontaneously ferments. The wines from separate vessels are then blended and racked into neutral barrels. Unfined, unfiltered, minimal SO2 at bottling. 12%ABV
