50/50 Riesling/Gewürztraminer from biodynamically cultivated 25 year-old vines on loamy/clay/limestone soils from outside Rosheim in the north of Alsace. Grapes are hand-harvested and pre-fermentatively macerate for 24 hours (cold soak) prior to pressing. Spontaneous fermentation and aging sur lie for 11 months all in a 100 year-old beer tun. Bottled unfined, unfiltered, no additional SO2.
