100% biodynamically cultivated Chardonnay from the Trouillot parcel which is also planted to Pinot/Trousseau/Poulsard. Grapes are hand-harvested, destemmed and directly pressed to stainless steel tank where the juice spontaneously ferments. Transferred to neutral 600L barrels for élevage over 12-18 months. Bottled unfined, unfiltered, no additional SO2.
