From biodynamically cultivated vines planted on limestone soils in a west-facing parcel in the '80s by Valentin's father outside the town of Poligny in the Jura. Grapes are hand-harvested, directly pressed and spontaneously ferment in stainless steel prior to élevage on the fine lees in neutral barrel for 18-24 months. Bottled unfined, unfiltered, no additional SO2.
